About the role

Protea Hotel Johannesburg Balalaika Sandton is looking for a Chef de Partie to manage a designated kitchen section and ensure food preparation meets Marriott’s high quality standards. The role involves preparing and presenting dishes, supervising junior kitchen staff, and maintaining hygiene, safety, and operational efficiency in the kitchen. The Chef de Partie will work closely with the Sous Chef and Executive Chef to deliver exceptional culinary experiences for hotel guests. Key Responsibilities: Manage and oversee a designated kitchen section Prepare and cook dishes according to established recipes and standards Maintain food quality, taste, and presentation during service Supervise and support Commis Chefs and kitchen assistants Ensure kitchen cleanliness and proper food storage Assist with stock control, ordering, and minimizing food waste Ensure proper use and maintenance of kitchen equipment Work collaboratively with other kitchen teams during service

Requirements

  • Qualifications
  • Professional culinary qualification preferred
  • Knowledge of HACCP and food safety standards
  • Experience
  • 3–5 years experience in a similar role
  • Experience in a hotel or high-volume kitchen environment
  • Experience in a branded hotel environment is advantageous
